I remember the feast me and my family enjoyed during the holidays. The many choice of dishes we prepared, each one of us having our own signature dish. It has been our tradition to cook together every Christmas and New Year’s eve. Since I was a kid I always look forward to this special occasion. That’s when my passion for cooking started. The smell of mom’s Pork Hamonado (pork ham) enticed me that one Christmas eve and it continue to entice me until this day. I love the beautiful colors of veggies, meats, seafood, fruits, and even the canned ingredients that she buys for all the oh-so-good dishes she prepare.
When everything is cooked and ready we will then wait for the clock to strike to 12 so it’s officially Christmas or New Year and we will all eat together. Everyone praising each one for the yummy dish he/she cooked. One of the dish we always got to have during this season is our Chicken Macaroni Soup or Chicken Sopas as we call it here in the Philippines. This is a simple dish that is considered an everyday meal but we all love having it that we gave it the honor to be on our Christmas and New Year feast!
This is perfect for the cold season this time of the year. This dish is not only cooked to warm you up but also because it’s full of the good stuff. The good stuff meaning healthy ingredients of course!
Macquelinedc’s Chicken Macaroni Soup
3 chicken cut up breast part cut into strips
400 grams macaroni noodles
3 carrots cut into strips
1 cabbage sliced thinly
100 grams hot dog cut diagonally
100 grams chicken liver cut into strips (optional)
1 big can evaporated milk
2 onions finely chopped
6 cloves garlic finely chopped
1/2 cup oil
5 liters water
salt and pepper
How to cook:
1. Saute onions and garlic in oil, stirring occasionally and cook for 5 minutes or until softened.
2. Add the chicken and chicken liver and cook for 5 minutes.
3. Remove the chicken liver and set aside.
4. Add the water and bring to a boil.
5. Then add the macaroni. Cook for 5 minutes.
6. Add salt and pepper to taste.
7. Let it simmer then add carrots and cabbage.
8. Add hot dog and chicken liver.
9. Add evaporated milk and let it boil for another 3 minutes.
10. Serve hot.
Each family has their own version of this dish. Some add more kinds of veggies or use ground pork instead of chicken. But we love to use chicken because that’s how our mom cooks it. We grew up eating and loving her recipe and we will always love it and rate it as the best! But I added some more ingredients and cook it differently.
